Increase oxygen while they're gasping, to help them out if anything

Metronidazole and Praziquantel are unlikely to help the fish.
Metronidazole is an anti-biotic used to treat internal protozoan infections. The most common symptom of this is fish eating but losing weight over a few days to a week, and doing stringy white poop.

Praziquantel only treats tapeworm and should treat gill flukes. Most fish have gill flukes and some have tapeworm. Common symptoms of gill flukes include fish breathing heavily near the surface or filter outlet. Common symptoms of intestinal worms include eating well but slowly losing weight over months, and stringy white poop.

--------------------
What does the fish's poop look like?
Have you checked the ammonia, nitrite, nitrate, pH and GH levels?
Have you cleaned the filter in the last few weeks?

--------------------
The best treatment for livebearers that act funny is cleaning the tank (75% water change and gravel clean the substrate, and cleaning the filter). Then adding salt.

Add 2 heaped tablespoons of rock salt for every 20 litres of tank water. Keep salt in there for 2-4 weeks. The salt is fine for your fish during this period of time.

The fish are still eating but some have lost weight pretty quickly.

They have stringy white poop. Water parameters are 0 nitrite, 0 ammonia, and 5 nitrate. I recently found out i have soft water although when I got the fish I thought it was hard water. I clean the filter every few weeks and I cleaned it again yesterday by rinsing the media in tank water.

When the fish is breathing heavily, usually it's at late/terminal stages and can be quite hard to save.
I think your best solution now as what Colin mentioned is to use salt.
You can do a quick dip(short bath) for your Guppy with very high dosage (higher than 1 tablespoon per 10 liter of water) of salt to kill the flukes inside the fish gills.
The salt will also help to clear the mucous inside the gills.(if I remember correctly of what I read)

At the same time you can continue using the General cure to treat the internal parasites.

Thanks. I'm at school right now as we started to go back in person today and I have art lessons directly after school so I won't be home for about another 8 hours. I hope he makes it till then :(

These symptoms would suggest an internal protozoan infection and Metronidazole might help. However, if only one fish is affected, it will cost more for the medication than to replace the fish.

-------------------
If the fish has died or if a fish ever dies in any tank, do a 75% water change and gravel clean the substrate every day for a week. This will help to dilute disease organisms and usually helps prevent other fish dying. However, if more fish die, post pictures asap and try to find out why they are dying.

It was a few fish who were acting sickly and nearly all had stringy white poop. One platy was extremley skinny but since starting the meds she has gained a little weight.

I looked all over the tank but I can't find the guppy's body or skeleton :( I don't know if I should do the water change or not because I can't find his body so I don't know 100% if he died and I did the second dose of the general cure earlier today so I'm not supposed to do a water change for 2 days per instructions of the box.

I'm sorry you lost him:(

The platy looks deformed to me. The body shape just isn't right. So that might just be a birth defect rather than the diseases you're battling, although clearly there is disease happening.

I'm sorry I can't be any help, but Colin and @Lajos_Detari have given the best advice. I hope things are improving!

Things have been much better now! All the fish are healthy and there is no white poo anymore! The platy has definetly gained weight and seems better. I haven't lost anymore fish:) thanks for all the help everyone!
