Help With Amano Shrimp

Hi, as u have such a knowledge. I think u can offer me a hand quickly about my first time experiences with this shrimps. I found them first at pet at home. And bought 4 they all fine and busy eating, pretty happy. I love them. So I bought more 6 again together with some soft plants they like to eat. But unfortunately, they all died on that night. All I did was put the plants and put 3 jbl fertiliser tablet. They died in colour. Red, blue, then suprisingly, pink like the shrimp at supermarket. They struggle all night. Thus, I change water and hope that it helps. However, they died.

The next day, I tested water. Ammonia zero. Nitrite zero. Nitrate marginally high. Little bit. They offer me more shrimps. But this time, they all hiding. But I couldn't find 3 shrimps. The rest hide all day at same place. Without eating I guess. I start studying why on the Internet. But could not find one yet. I don't want them die again. Please u can help me because I found that pets at home staff have oblivious low knowledge.

Here is some facts.
Fluval 125lt tank
Fluval 205 filter (should be fine for ammonia.)
6 neon 6 dwarf neon 6 harlequin 2 gourami which are very dump and quite guys 6 regtail platy and their babies 5 very tiny colourful fish. And 3 fish which has horizontal stripes head to tail
Nearly 1 year old tank. When I change water, 20 lt always
Hiding spaces and quite a deal of plants
Air pump

Please what can I do? Why? I start crazy about shrimps.

Did you put new plants in the same day you bought the shrimps?
