What are the dimensions of the tank? In the photo it looks like a tall, thin columnar tank. If it is indeed narrow it is not suitable for large fish which need a longer swimming length despite the volume.
It's 28" diameter and 90cm water depth definitely not a small tank
 
We did roughly a 40 percent water change yesterday and we do that weekly I always add aquasafe to dechlorinate the water first we also have an under gravel filter

As Fishbearer says, the dimenions are more important than the volume.
 
Cories will need more space at the bottom as well (and sand, which the tank does not have). Since your water is soft, I would rehome all the livebearers in addition to the fish that are too big for the tank. That will reduce the amount of waste produced by the fish, and your nitrates won't be as high (you still have to do weekly water changes though).

The 2 plecs I have (I believe are bristlenose) are the largest of my fish my swordtails and Cory's are small
it often starts with one, and it's easy to miss the early signs of ammonia poisoning in fish.

Those nitrates are high when you did a water change yesterday, roughly how much of the water do you change, percentage wise, and how often?

There is no way those are bristlenose plecos. They're massive. Can you take closer pictures of them?
It's good that there's no ammonia. Have you done a big water change to get rid of the nitrates yet?
