Help on planted tank

Please help.

I am about to set up a new tank for my tyre track (+ 1 pleco to come) and I would like to have it planted. Is this possible considering the "burrowing" nature of the eel?

If there are ways to plant the tank minimizing destruction, will you please give your recommendations, along with types of plants that will work? thanks.
 
We have a fire eel in a heavily planted tank with sand substrate.

Because the tank is heavily planted the eel never burrows, he just hides in the plants or in the hollow fake mangrove root ornament.

Another option is to use java fern which anchors to rocks & wood and therefore would not need planting and so won't get uprooted.
