How do you change the words under your avatar from Leader Of The Fishes to something else?

You have to have a certain amount of posts (1200-1300 ish) can't remember exactly how many.

Then the option pops up in the 'My Controls' Section, in 'Edit Profile Information'.

It's called 'Custom Member Title'
