Well if you've run tanks before and know about the processes involved, cycling etc. Then take a look at dwarf puffers. Those little guys are cute little buggers and they prefer slighty brackish (Salty) water. They are a bit finicky though and are hard to feed which makes it a little difficult for some. They look cool though!

If you just want easy to care for fish take a look at a pair or trio of killifish. Google killifish and you will find a TON of different species. They are fun to watch, breed (if you want) and are very beautiful. You can do a lot more than you would think with a 5 gallon you just have to be sure to have it filtered properly.

You can always go with a betta and make it kind of a fancy tank for him as well, but you're only able to keep one per tank

i wouldnt add guppies into a 5 gallon, too small
the most common set-up for a 5g is a fancy betta tank, i personally like these but other fish can live in a 5 gallon too (not with the betta)
a large shoal of bumble bee gobies would look nice, or what about a shrimp only tank?
heres a number of small fish: http://www.franksaquarium.com/nanofish.htm
