Do you think I'd be ok to put an armoured fan shrimp in with my potential male betta and 2 ADF's?

He'd probably be OK with the livestock, but based on the list it sounds like you're hoping to put him in a pretty small tank, is that right? An armoured shrimp really needs a 20G tank minimum as well as a strong flow around the tank.

They're shy too, so make sure he has a decent hiding place - although he'll dig himself one under any wood/rocks/ornaments you have given half a chance.

I'd agree with the above, armoured shrimp need big tanks with lots of flow, in some situations they even need to be target fed.
If it's a small tank, don't bother with the armoured shrimp as it may just slowly starve.

Your best bet would be 2-3 amano shrimp.

i find it best still to target feed my fan shrimp - just so i know they've had food - they love it - they freak hubby out though

Definately go for the amanos if the tank is under the 20g
