The question is how long to leave before changing!!

The fermentation process is ongoing but you want to always have peak CO2 not a dwindling source so although you can leave it for weeks and it will still be producing some, you should change it between 4 days to 8 days dependant on how much CO2 it is producing with the mix you choose.
