Well why don't you switch to sand? The sand isn't very expensive at all and it looks rather nice. You should just try some easy plants and start out with those to see how your luck is with plants.
Well, I don't know if you're looking for pics, but here's my 10G planted tank I setup for my betta girls.
psst - the fake (but very realistic looking, if ya ask me) driftwood came from PetSmart for 12$ or so...
The plants I used were moneywort, mondo grass and hair grass. I wanted to go with sand bottom, but the leap to live plants was a big step for me. I LOVE live plants now - wouldn't have a tank (other than a mini betta tank) without them in the future.
Big ol' beach pebbles and smaller polished rocks go well, too.
OH, and I got some slate in it to build hidey places. They love it
If you want to get rid of the tannins and get back to clearer water, put some carbon in your filter and keep changing it regularly. Eventually it'll take out all the tannins.
BettaMomma: Looks good, but I have one concern. Mondo Grass isn't an aquatic plant. It can survive submerged for a while, but it will never grow. Eventually it's just gonna rot away I keep seeing it at Petsmart in the aquarium plants... but it's not It belongs with terrarium stuff where it lives emerged with maybe the roots submerged... as it is not a true aquatic plant. If you can, pull it out and replace it with Dwarf Sag... and you'll get almost the same look with a plant that can actually grow.
