Is it ok to cut roots of plants??

I have removed all the plants from my tank, some have grown massive roots. They are really hard to get them all back under the sand.

it doesn't hurt to chop em right back. In Fact it can stimulate further growth, so get chopping! :good:

You should be ok to trim the roots but dont do a general cut along them all, just cut away longer ones but leave an inch and leave smaller new roots alone. The plant will still be growing these roots as we speak but bigger plants need bigger roots to stay stable and frimly planted in the gravel/substrate, so aslong as you leave sufficient roots you will be fine. Plants can root from a cutting or in some cases a leaf so its fine.

Just make sure you use a pair of sharp scissors or a sharp knife, a clean cut is always best.
