I have a few platies, balloon mollies and a guppy.
Could I keep a few cherry shrimps with these fish?
Or if not, suggest any other shrimps?

Cherry shrimps won't add hardly anything at all to the bioload so yes you can

I meant, will my other fish eat them?

There is no "yes or no" answer for that. Many people will say they are fine with those fish but I guarantee someone will have a story about their raging guppy or something lol. IME, those fish will eat shrimplets if they can find them and adult shrimp may get pecked but it's not like they will hunt them like a gourami or a betta would so you should be ok as long as you have many plants and hiding places for them.

I have a molly who ate cherries, i wouldnt try it unless they are cheap
