I bought some golden apple snails in the spring of this year. They are in a 120 litre tank with guppies and cherry shrimp.
They more than doubled in size and then laid several clutches of pink eggs, so I now have lots of beautiful babies.
The shrimp and snails seem to co-habit well, (everything in the tank is mulitiplying, shrimp too) I often see shrimp hitching a ride on a snails back around the tank but the other day I was concerned to see a large shrimp on top of a tiny snail and it seemed to be eating it!
Now that tiny shell is empty and I've found what appears to be a second tiny empty shell, so my question is....
...can anyone tell me which is most likely please? That the snail had died and the shrimp had a go at the remains...or will cherry shrimp eat baby apple snails?

well, It probably eat the little baby. sorry about your snails.

I'd say the baby had died. Cherry shrimp won't eat their own babies or the smallest of fry, so I doubt it they attacked your snail.
You possibly don't have enough food for the snails and they got outcompeted by the shrimp/adult apple snails.
Try putting a piece of veg, some deshelled boiled peas or similar stuff, whatever you've got.
