I have an established tank with about a hundred cherry shrimp that just keep breeding and some small snails that keep appearing. I have a smaller tank, partitioned with a male betta on one side, and 2 females together on the other side. Can I put the 2 females in the shrimp tank so that the male can have the other tank all to himself? I don't want them to kill off the shrimp if I do this

Unfortunately shrimp are seen as a food source for bettas.  It might work for a short amount of time but normally will not last.

However your current situation with your bettas is not the best.  Female bettas are best kept in groups of 5 + to help lessen the overall aggression between the individuals.  Keeping them in groups of 2 or 3 are very precarious and often result in injury (or death in the worst situations) of at least one of the females.

Oh dear :( I did always wonder if they should be with others. Unfortunately I can't do anything about it as they're not actually my fish

You can try and see how they react, but be prepared to move them back over if they start to pick on the shrimp, I have one female alone with cherry shrimp though she is very young and probably the same size as the shrimp so she can't do much damage at the moment, how long have these two females been together? any signs of aggression between them?

The females have been together for months and as far as I know they are fine together

I have a male betta roughly a couple months old and I got ghost shrimp for the tank and he harassed them so much they died. I didn't think there would be a problem since the shrimp were bigger than him but nope.

Ahh better not try it then!

As with most fish, it depends on the individual.
I had the opposite happen with a male Betta, as to GuppyGirl. Got some Ghosts and he was indifferent to them. Even when they plowed right into him.
