I would like to use a matte black vinyl and it is easy for me to get. But obviously it is one sided with the adhesive on the other side and I am not sure what the color is on the adhesive side or what it would look like attached in reverse.

Is there a way to attach it in reverse? Can this me attached on the inside of the tank? Would the adhesive be safe?

I am kinda opposed to paint… 75 gallon rimless tank is to heavy to bring it outside and paint.

Water based paint would most likely start to come off if it were splashed and something that is not water based will be pretty much permanent or a pain to remove.

I use black construction paper, and have for several years. You want a non-glossy flat black which is easier on the fish. And it makes the back of the tank almost vanish.
 
Black construction paper, a lawn and garden bag, a cheapo black tablecloth from amazon, or static window film (also available on amazon or a home center) are all good options.
 
I used blue corrugated poster board for my 125 once I took down the DIY bamboo background. It's held up with electric tape on the rim
 
Black construction paper is what I use as well. Cheap, easy to apply, lasts forever, exactly the most desirable color (matte).
 
I painted the back of mine with Plastidip (liquid rubber). It looks great, completely smooth, matte look and it peels of easily. I used this guy's video which was pretty handy:


My reflection messes it up but there are no wrinkles or anything. It's completely flat and smooth.
