Beginning With Schooling Fish?

I always add schooling species in groups of at least 6. Never had a problem, as most tetras, danios, etc are small fish, so its not like adding say 6 4" cichlids at one time.
 
I'm not going to add anymore fish at least until my tank is cycled (and possible not for a long time especially since my mama gourami is so aggressive), but I was thinking about what people do when they start out with tetras or other schooling fish.

Generally people are not supposed to add 6 fish to a tank right off the bat, but if it's a schooling fish you probably don't want to have it alone or with just one other fish as well right? Do you start out with two fish and add two more every week or two? I've heard you shouldn't even double the population in one go, leaving it to be one fish every week or two for two months? I suppose its more of a question of the fishes happiness in the tank over their physical well being.

What do you guys with schooling fish do when you're introducing them to the tank?
 
How are you cycling the tank? Is the gourami in the tank already or are they all going to put in a new home?

Fish cycling, we're at the last stretch with the nitrites slowly dissapearing. Well eventually they'll outgrow the tank, so I was going to turn this current tank (20g) into a hospital/breeding tank and get a bigger one in a little bit down the road. Even though this had nothing to do with my question. :p
