Over the past few weeks, my elder apple snail has regularly been found floating at the waters surface. I immediately thought it was dead, but after a gentle prod it sank bank down and started moving around. He's at it again this morning after I watched him scale the tank glass yesterday evening.

any idea what this behaviour is, or if it is a sign of illness?

IME this is perfectly normal. Mine do it quite often and then sink to the bottom letting bubbles of air out of their shell.

interesting. In the 12 months I've had them, this is the first time I've noticed it and it appears to be quite regular.

My young ones and older ones do it. All water stats are great in all the tanks. They constantly lay eggs too.

It fine mate, in the wild they will float to the top water and allow the the current to take them to a new area. Think of as Concorde for snails :good:
