My son came rushing upstairs this morning to tell me that there was a dead shrimp in the tank. On closer inspection, all 3 shrimps were alive & well, so I think that the bits that he thought were dead shrimp must have been an old shell that had been molted.

Do I need to do anything special for the shrimp which has molted (if I can figure out which one?) and should I remove the old shell from the tank?

You shouldn't need to do anything special. The one that has shed may hide a bit for the next few days because their shell will be soft but they should be fine.

I would leave the shell in the tanks for a bit, some shrimp like to eat it to get some nutrients back. My CRS seem to eat the sheddings but by Anamo don't. If its not been eaten by sunday i would take it out.
