so I smashed my tank the other moving it to another house, so am picking a new roma 125 tomorrow but will be in a 7 seater car an obviously I dont want this smashing shall I put it on the back seats with a quilt underneath it or pull the seats in the boot area down an put it there?

I'd put down the seats & lay it on as flat a surface as possible with the quilt under it

What about the trunk? In my car that's the flattest surface and will be the easiest to clean if the tank breaks. Plus you can put stuff on all sides of it to give it more support.

I drive a 4 door, so I'm not sure if a 7 seater even has a trunk...

I'd put the seats down and get a flat an area as possible, take no chances.

the seats fold up in a 7 seater so if I put it in the back is there anything I can put under it to give it more protection

Just make sure it's supported in the middle as well as at the edges.

Put it on a flat surface. What makes tanks crack is uneven support for the weight. If the entire perimeter is supported you should be fine.
