I would like to add more sand to my aquarium to make it deeper, will this mess up the aquarium or will it be fine?

Rinse the sand in a bucket first, swirl it around using your hands, then poor out the dirt etc...When adding to the tank turn the filter(s) off and wait for it to settle. The water will probably be a little cloudy, but once the filter(s) is back on it should clear. Then, rinse the media, and job done.

Do you have to wait for it to settle before putting fish back in?

Use some 40mm waste pipe to put the sand in the tank once its been washed. It will stop the water clouding so much.

i was only going to add about another inch or so. i don't think i need to remove the fish for this?

No, you should be fine. I've done it a few times before in my old tank without incident. I only suggest using a tube of some kind as it stops the particles spreading throughout the tank and clouding it up for hours. I would turn off the powerheads/filters as previously suggested too.
