I've finished cycling my tank so I went to the fish store and bought 6 neon tetras and a clown pleco. The pleco will be traded in for cherry shimp when my order gets in, and I'm planning on buying an opaline gourami and a gold gourami (male and female) if they fight I'll trade the aggressor in and try another one.

I was wondering if I could fit anything else in a 20 gallon when I have the 2 gouramis, 6 neon tetras, and some cherry shrimp. I don't want to overstock my aquarium.

As it is now you are understocked and can put in something else if you wish. Perhaps another small shoaling species or more neons.
 
Don't try to keep a male and female three-spot gourami in a tank that's only 20 gallons. The male will kill the female. Stick either to only one (prefferably the female) or go for a different species altogether and get a trio (1 male, 2 females - honeys, dwarfs, pearls are all options from which you can choose a single species and keep in a trio).
