Can anyone explain why when I connect two air stones to this 1 tube, air only ever comes out of 1/side/ stone? Guessing it is physics.

I tried with multiple connectors, two tubes and 3 air stones, switching them around. Is there any way to make it happen?

Yeah, it's just physics. If one stone is even slightly less dense/more porous than the other, all the air will go that way. If you want to run multiple stones, you usually will have to put them on a valve like BrianK shows above. Then you can adjust the air pressure to compensate for the different properties of the stones.
