Did you cycle the tank before adding fish? If not, test your water daily as you might see ammonia spike if you didn't establish beneficial bacteria in the tank before adding fish.
It might be that other fish nibbled a bit after he died.
Can you post more info about your tank (size, water parameters - ammonia, nitrite, nitrate, pH, GH, KH, info on water changes)?

Based on your water parameters I'm guessing water quality issues. You note you are doing water changes every other day. If you are only doing water changes every other day with that level of nitrites and ammonia in your tank that is probably causing your fish's distress.

Hannah, if you take a water sample into a local pet store or PetCo they can test your water parameters for you. Please try to do this and post results so we can help troubleshoot with you.

6.5 hours of low lighting a day is about what you'd want to do for a newly planted tank, ramping up about 30 minutes per week until you get to 8 - 10 hours a day. Make adjustments based on algae and plant growth. So go with more lighting first for sure.
