I would say some still have some growing to. The reason rummynoses can't go with angelfish is they often see the smaller linear tetras as prey and the ones you saw with angels were probably raised with the angles hence the reason they don't attack or eat them.
If it is a male betta it is best kept without other fish species due to its aggressive nature, you might be able to keep it with shrimp and snails but each betta has its temperament. If you provide water parameters we will be able to provide more help with stocking options.
Yes from what I can tell the dwarf gourami would be fine in a 10 gallon but putting them in a separate tank doesn't change the fact that they are prone to disease due to inbreeding. A more experienced member will be able to help you further. :)
Yes ok if you are going to that I would still recommend doing the following:
3 angelfish instead of 4
20-24 rummynose
2 albino bristlenose instead of 4
10 bronze cories instead of 12

Sorry to go against everyone else but I don't think cardinal tetras are recommended as tank mates for angelfish as they may eat
them. Usually any small linear fish can be attacked or eaten by angelfish as it is seen as prey and also fits in the mouth of a larger angelfish.
Yes that's a bristlenose. It may be a bit young to tell still I think. You can generally tell at about 6 months old and sometimes a month or two earlier depending on the conditions.
