My goal is to breed them, though I haven't managed that yet. They might just be young, but if they've not bred in a few months, then I'll look into making my water more acidic for them.

Looks like a male IMO. Not many years in the hobby, but l have quite some experience with sexing Rams...

Tank bred. Simply because l don't like the thought of taking them from their natural habitat. My Betta Coccina are just f1, so they're probably just as healthy as wild caughts, but a bit more tolerant on water conditions.
