I’m not certain it’s an ammonia issue but of the three compounds ammonia is the most toxic. I suggest getting a test kit for ammonia. Others on the forum will have suggestions too.

Looks like poop to me. Do you own a siphon to clean the substrate? You should clean it weekly along with a water exchange. You can buy an aquarium siphon for under $20 on Amazon or at Petco or Petsmart.
