Thinking about getting some cherry shrimp for my 5 gallon. how many should I get for a 5 gallon to not make bio load "heavy" or overwhelming, also how do I take care of them?

I changed my mind and decided to go with amano shrimp, who enjoy slightly hard water. and 2 cory catfish who enjoy a neutral ph

To start with you cant keep just 2 corys, and how do you have neutral PH with slightly hard water?
 
To add to Nick's comment, I can't think of any cory species suitable for a 5 gallon tank.
 
I'd add that hardness is far more important for fish's health and wellbeing than pH.

If your water is hard, you need to looking at hard water fish/inverts, whatever the pH might be.
 
Amano shrimps and perhaps a few cherry shrimps with a couple of ramshorns or similar snails is a pretty neat set up.

I say that because thats exactly what I have !! :D

Have amano shrimps, red cherries and one black cherry, did have a nice large pink ramshorn but have not seen it for a while, hope it will pop up again soon, and a couple of pond and MTS snails. Pretty fully stocked and just has a simple sponge filter with a 6w led tube.

if the corys are to much, I can return them to the store with ease, just want to double check, 2 corys in a 5 gallon is to much?
 
Yes, 2 cories even if pygmies or habrusous is too much for a 5 gallon tank.

The footprint of a 5 gal is very small, really nowhere near enough for cories to roam about on.

As well as the fact that cories really do better in larger groups, at least 8 of any species is preferable. If stocked in low numbers, they will rarely venture out in the open tank much and may get stressed etc.

I have been following your topics and heres a suggestion, I think you need to sort out your water and algae issues before considering fish.

I cant do anything about the other fish I have as of right now, I cant buy them and take them back the next day, its just "not right" in my opinion, but yea I am taking the corys back when I go into town, prob within the next 3 days, also the water is no longer hard, its a neutral ph, cycled (idk if you all knew its not new lol), and hardness of water is gone, as I said sorry lol repeated myself.
