I have a long in my tank and over the past few days it's grown like a whitey/clear gooey looking hairy substance :s what is this?

It's a sort of algae that feeds on nutrients leaching from the wood. You can scrub it off, but it will keep coming back, until the nutrients are used up.
 
It is totally harmless to fish and inverts, so it's nothing to worry about although it doesn't look nice.

It's on my last remaining plant also … guessing it's the same with that as it is with the log?
 
Yes; the plant is probably decomposing slightly, which is releasing enough nutrients to feed the algae.
